Build / Modifications and the LAW???

In the interest of staying on the right side of the law, when guy's highly modify and/or build their older cars, what is required by way of safety inspection?  When you modify the body structure is anything else required in addition to safety?

Any guidelines to follow?

I would suggest not discussing the changes you've made that may be illegal and/or deem your car not roadworthy.
Just as the Canadian Revenue Agency monitors online discussions regarding tax questions I would expect the Insurance companies can monitor an open site like this one to protect their liability when they insure people. This is 2017 and like to or not, you should have no expectation of privacy online!

A person can spout off about "the man" or our freedoms being eroded as much as you want but in the end you may be tying your own noose! Call me paranoid if you like but remember the stories of MOE guys looking under hoods of cars /trucks at car shows just to bust the person when he drives out of an event later?

I say build it and enjoy it but beware of the stranger that asks too many questions!

Yes Atomsplitter, you said it best.
In a nutshell, don't poke the bees nest if you don't want get stung.
The MTO inspection guide lines are online. After that it's up to the inspecting mechanic to interpret.
Become friends with your inspecting mechanic. Buy them coffee and doughnuts, they usually like that. I know I did.

to be honest the new guidelines are nothing to worry about, nothing has really changed, I still take my vehicle to the garage, get it inspected, do the stuff on the list, it passes, high fives all around.  actually these rules are even better as I take my stuff to a place where they are super strict anyways so I know my ****s safe, no 60 ounce safety's like some slapped together things you see out there.  what I think people need to do is know what will and wont pass when doing a custom build or rat rod, some things are specific to the year the car or truck was built, some are things you cant get around, like no fenders, that shouldn't pass as the rules are pretty clear but the inspecting mechanic is who decides still, so they are risking their license if they let things slip by.
